    This year long double period course is designed for students pursuing a career in the culinary or food service industry. This course continues the students’ knowledge and skills of food preparation. A major focus of the course is small business restaurant management. Instruction is provided in applied management, marketing, inventory and record keeping. Students learn the safety and legal guidelines for operating a catering or restaurant business and how to develop production and time schedules. Students are required to wear uniforms, appropriate clothing and footwear for this course. Interested students may dual enroll in the Penn College Now program. This program provides an opportunity to earn up to five Penn College culinary arts program credits, at a discounted rate.
